AMPESI


Food is very essential to the body since we eat to survive. On my blog, I will show out clearly of local staples in Ghana especially by the Fante

BROADZE AMPESI AND KONTOMIRE (PLANTAIN AND KONTOMIRE STEW)
INGREDIENT NEEDED: Plantain, kontomire, pepper, tomatoes, onion, palm oil, salt, kako or koobi( Salt fish)

PROCESS:  In the first place, you will put the vegetables on fire, when it is well cook you pour a small amount of water from it and use that to boil your kako and koobi and the fish. You don’t boil it for too long because the kako and koobi are soft and preferably soft fish is recommended. You then move on to grind your vegetables in earthen ware ( Asanka) after, you pour your cooked fish and the kako inside and stir it together. You pour an amount of oil into a substance and add sliced onion to it and put it on fire for some few minutes and pour it unto the grinded vegetables in the “asanka” and stir it together. And that ends the preparation of the kontomire stew

There after you peel your plantain, put in a source pan add an amount of water and salt and put it on fire and allow it to boil till it well cooked then you add an amount of cold water to it on the fire before your take it off the fire, you allow the plantain to be in the water for a while before you pour it away


This process leads to the preparation of this rich African delicacy.
